Whiskey Hill Smokehouse: Trophy Series Exotics and the Jerky Hut Label
Two lines from one Oregon smokehouse: the Trophy Series exotics that made the Jerky Hut table famous at the fairs, and the Jerky Hut label beef bags, from Luau Louie teriyaki to the Chernobyl ghost pepper.
- 3 oz: Trophy Series exotic bags
- 8 oz: Jerky Hut label beef bags
- Hubbard, OR: per the label
- GF: every Trophy Series bag
Who they are
Whiskey Hill Smokehouse LLC is an Oregon maker; the Cowgirl bag lists Hubbard, Oregon, and the Cowboy Hickory description talks about slow smoking over Oregon hardwoods. The company also owns the "Jerky Hut" name that appears on the 8 oz beef bags, which is where our own name comes from. We are the New York table that carries them; we do not make anything.
The Trophy Series
The Trophy Series is the exotic line: gator tail, bison, elk, venison, wild boar, kangaroo and smoked duck breast, each in a 3 oz vacuum-packed bag labeled gluten-free with no fillers. These are the bags people photograph at the fair and the reason exotic jerky in New York is something you can actually buy without driving to the Gulf. Each meat has its own taste guide, starting with what alligator jerky tastes like.
Several Trophy Series labels we have read (venison, wild boar, duck, kangaroo) carry a full ingredient list built on brown sugar, honey or gluten-free soy sauce, and the venison label says to eat or refrigerate after opening. Our how to store jerky guide follows that instruction.
The Jerky Hut label
The 8 oz Jerky Hut label bags are the beef classics: Luau Louie mild teriyaki, Kowifornia Gal habanero teriyaki, Cowboy hickory smoked, Bad Bart cracked black pepper, Chernobyl ghost pepper, and the new Sassy Sal's Cowgirl, a hot hickory-smoked bag. The one exception in size is the Carolina Reaper Extremely Hot at 7 oz, which is also the only beef bag on the site that says gluten-free on its label.
Questions about Whiskey Hill
Is Whiskey Hill Smokehouse jerky gluten-free?
The Trophy Series exotics are all labeled gluten-free with no fillers. Of the Jerky Hut label beef bags, the Carolina Reaper Extremely Hot says gluten-free; the Cowgirl lists wheat, and the others have not been confirmed.
Why are the exotic bags only 3 oz?
Gator tail, kangaroo and elk cost far more per pound than beef, and a 3 oz vacuum pack is the right size to try a meat you have never eaten. Every bag is still $25.
Is Jerky Hut NY the same company as Whiskey Hill Smokehouse?
No. Whiskey Hill Smokehouse makes the jerky in Oregon and owns the Jerky Hut label. Jerky Hut NY is the Albany, New York family business that sells it at events and online.
Which Whiskey Hill bags do you carry?
Trophy Series: Gator, Bison, Elk, Venison, Wild Boar Bourbon, Kangaroo and Smoked Duck Breast. Jerky Hut label: Cowgirl, Luau Louie, Kowifornia Gal, Cowboy Hickory, Bad Bart and Chernobyl, plus the Carolina Reaper Extremely Hot.
