What Does Bison Jerky Taste Like?
Like very good beef with the fat turned down and the flavor turned up. Bison is a little sweeter and a little richer than beef, with a deeper red color. In the Trophy Series bag the brown sugar, honey and cracked black pepper give it a mild-to-peppered finish.
Bison versus beef
Side by side, bison is leaner, so the jerky is a touch firmer and the flavor is more concentrated. If beef jerky is the baseline, bison is the same song played a little louder and cleaner.
Heat
The pepper is fresh cracked, so some slices sit at mild and some at spicy. We list it as mild, a 1 on our meter.
Who it is for
People nervous about the word exotic. It is the bag we hand to someone who says they just want good jerky, and it anchors The Exotic Four box.
What it is not
- Not gamey or livery.
- Not fatty; it is leaner than most beef jerky.
- Not hot, though you will notice the pepper.
