  • 7 oz: every Settlers bag
  • 1977: "crafted since," per the label
  • Walnut, CA: where the label says it is made
  • $25: a bag, 3 for $70

Who they are

Settlers Jerky Company is a California jerky maker; the bag puts the company in Walnut, California, with "crafted since 1977" under the covered-wagon mark. We do not make jerky ourselves, so what we can tell you is what we have tasted and what the labels say. The labels are unusually complete: a full ingredient list, a heat gauge (mild, medium or hot) and a note that liquid smoke is added.

Settlers took over the spot in our lineup that a half-pound Papa Dan's line used to hold, and the swap came down to flavor and consistency across a long season of shows. The 7 oz bag is a touch smaller than the old half pound, so the price per ounce is explained plainly in our big bag versus snack bag breakdown rather than hidden.

The brisket line

The four briskets are the newest bags and the ones people ask about at the fishing shows. Brisket is a richer cut than the round most jerky is sliced from, which is why brisket jerky chews softer and carries more beef flavor. Settlers makes it in teriyaki, peppered, Korean BBQ and sweet and spicy, and the four together are the Brisket Four preset in the box builder.

Heat, gluten and labels

Settlers bags run from mild (sweet garlic, whiskey BBQ, prime rib, teriyaki brisket, Korean BBQ brisket) through hot (sweet and spicy brisket, ghost pepper) to the Carolina Reaper, which sits at the top of our meter. If you want the honest version of how the Reaper compares, the Carolina Reaper jerky guide spells it out.

Every Settlers label we have read lists soy sauce brewed with wheat and says "Contains: Wheat, Soy," so none of these bags carry a gluten-free badge on this site. The Trophy Series exotics from Whiskey Hill are the gluten-free line; the gluten-free jerky guide lists exactly which bags qualify.
